The BioGi automatic yogurt maker provides you with a solution for how to make yoghurt that is natural, fresh and creamy by using a controlled and hygienic technique for processing ordinary milk or soymilk.

BioGi uses a thermostat to maintain the correct level of heat that ensures satisfactory and quick results. Because the process takes place while the milk is still in the original milk container, it doesn't need preheating (if your container doesn't fit in the device you can also use the provided plastic container). It offers a solution for how to make yoghurt at home in a sterile process and to get delicious results each time.

Operating instructions
  1. Open one milk or soymilk container (bottle or carton).
  2. Add 50cc/2ounce plain curd (bought in a store or from the previous yogurt you made/bought) or a starter powder to the container.
  3. Mix well.
  4. Plug the BioGi into a standard electric socket (in the BioGi Pro devices you'll also need to either turn the "off/ on" switch or to set the processing time).
  5. Place the milk container inside the device.
  6. Wait 8-12 hours (the longer you wait the sourer and thicker the yougurt will be).

That’s it. After cooling, add whatever flavor you like (or keep it plain). If you keep it sealed in the fridge it will stay good and fresh for between 10-14 days.

How to make yoghurt?
When making this creamy dairy product you need to know that it is produced by bacterial fermentation of cow milk. Fermentation (the chemical conversion of organic compounds by enzymes) of the lactose (milk sugar) produces lactic acid. The reaction between the lactic acid and the milk protein gives this dairy product its unique flavor and texture. There is evidence of cultured dairy products being used as human food for at least 4,500 years, but although many countries claim that they were the first to discover how to make yoghurt, there is no clear evidence of its native origin.

Tips on how to make yogurt
  1. It's best not to "disturb" the BioGi while it is working.
  2. Don't leave the milk container in the BioGi device for more than 12 hours: The curd will separate from the liquid whey.
  3. Make sure that your starter date has not expired. The culture becomes weaker over time.
  4. Skim milk might produce results that are too watery or soft. You can make it thicker by using whole milk or by adding milk powder to the mixture. If you choose the latter mix well or melt in some warm milk to avoid lumps.
  5. Use only plain cultured milk as a starter: Sweet or flavored will not work.
  6. The longer you leave the milk container in the BioGi device (no more than 12 hours though), the results will be firmer and sourer.
  7. Add flavoring, sweeteners and fruit only after the automatic yogurt maker has finished processing and the results are cooled in the fridge.
  8. Keep your dairy results in the refrigerator. When cooled properly it can be kept for between 10 and 14 days.

What are Probiotics?
Probiotics are simply live bacteria that we eat and are defined as live microorganisms. Probiotics contain potentially beneficial bacteria. They have been used in the food industry for many years, because they are able to convert sugars (including lactose) and other carbohydrates into lactic acid and they may beneficially affect the host by improving the balance of the intestinal microflora. Through the centuries, people have had the belief that certain foods possess life-giving powers. Yogurt is one of those foods. The fact is, yogurt doesn’t really have life-giving powers, but research has shown that it offers a range of nutritional and bacterial benefits. Let’s start with a taste of yogurt history. Yogurt was first made hundreds of years ago in the Middle East by nomads. They fermented milk from different animals when their milk was plentiful, and turned it into yogurt to eat and drink. In winter, when milk was scarce, they made yogurt from a type of dried milk. Yogurt was probably discovered by somebody trying to preserve milk by heating it gently over an open fire. Natural bacteria then turned the milk sour forming a basic type of yogurt. Of course, the early yogurt makers couldn’t have known what was really happening. The milk’s undesirable micro-organisms were being destroyed during the fermentation process. Meanwhile, the milk’s 'friendly bacteria' produced lactic acid, giving this ancient yogurt a distinctive pleasant taste and smell you still experience.

THE TRUTH:
It was only in the twentieth century that doctors discovered that these bacteria were, in fact, yogurt’s secret ingredients. When live 'good bacteria', known as 'cultures' are added to a milk mixture, warmed and then left to mature, we get a great tasting, nutritious snack - yogurt. Made from milk with added skim milk, yogurt is also a great source of protein, carbohydrate and calcium for helping to grow strong bones (and you’ve already read how important that is). Nestlé only uses premium quality milk to make their yogurts. The milk is concentrated by evaporation and blended to ensure a thicker yogurt. In the yogurt making process the raw milk is then homogenised like the milk you drink every day, to evenly distribute the fat throughout the milk and make a creamier, even thicker yogurt.
